ISET-ის ხაჭაპურის ინდექსის აღმავალი ტრენდი 2019 წლის ნოემბერშიც გაგრძელდა. ნოემბერში ერთი სტანდარტული იმერული ხაჭაპურის მომზადების საშუალო ღირებულებამ 4.1 ლარი შეადგინა, რაც წინა (2019 წლის ოქტომბრის) თვესთან შედარებით 6.1%-ით, წინა წლის ნოემბერთან შედარებით კი 12.6%-ით მეტია.
ეს აღმავალი ტრენდი მოულოდნელი არ ყოფილა, რადგან, როგორც წესი, წლის ამ პერიოდში ზრდას ახალი რძის მიწოდების სეზონური შემცირება და მარხვის დაწყების წინ მოთხოვნის ზრდა განაპირობებს. შედეგად, ყველისა და რძის სხვა პროდუქტების ფასებიც იზრდება. თუმცა წლიური ფასის ზრდა მეტწილად ქართული ლარის აშშ დოლართან მიმართებაში გაუფასურებამ გამოიწვია. წლიურ ჭრილში ფასები გაიზარდა ყველა ადგილობრივად წარმოებულ (კვერცხზე და ყველზე) და იმპორტირებულ (საფუარი და კარაქი) პროდუქტებზე. ზრდა შეეხო იმ პროდუქტებსაც (ფქვილი და რძის ფხვნილი), რომელთა წარმოებაშიც იმპორტირებული ინგრედიენტები გამოიყენება.
როგორც გრაფიკზე ვხედავთ, ნოემბერში (2018 წლის ნოემბერთან შედარებით) ხაჭაპურის ინდექსის წლიური ინფლაცია ძირითადად ხაჭაპურის მთავარმა ინგრედიენტებმა გამოიწვია. ყველის ფასი 18.6%-ით გაიზარდა, ფქვილის – 8.0%-ით, კვერცხის – 3.4%-ით, საფუარის – 2.5%-ით, რძის – 2.7%-ით, კარაქის კი – 1.3%-ით, რამაც გამოიწვია ხაჭაპურის ინდექსის გაძვირება.
თუმცა უნდა გავითვალისწინოთ, რომ 28 ნოემბერს შობის მარხვა დაიწყო, რაც რძესა და რძის პროდუქტებზე მოთხოვნას შეამცირებს და ხაჭაპურისფასის კლებას შეუწყობს ხელს.
